ABSTRACT
Abstract Natural colorants have become a developing market because of consumer preferences, and more cost-effective stable production is necessary. In the present study, natural green colorant was obtained via microwave-assisted extraction from spinach waste to produce affordable, environmentally-friendly, innovative colorants. The extracts were encapsulated with zein uniaxial coaxial electrospinning techniques overcome stability issues associated their color. encapsulation efficiencies uniaxially chlorophyll extracted by microwave 63.50 57.18 for b , respectively. found 49.53% 88.58%, addition eumelanin may contribute positively antioxidant activity thermal electrospun samples. test against light revealed that 61% could be preserved electrospinning. addition, when chlorophyll-loaded nanofibers incorporated into yogurt, color achieved during storage.
