ABSTRACT
Abstract Purpose The implementation of electron beam radiation coupled with the use probiotics is one newest food processing technologies that may be used to ensure safety and improve shelf life products. purpose this study was evaluate effect 50–150-Gy irradiation on antimicrobial activity putative probiotic strain Lactobacillus rhamnosus Vahe. Methods Low-dose lactobacilli cells performed using Advanced Research Electron Accelerator Laboratory’s accelerator, agar well diffusion method Verhulst logistic function were anti– Klebsiella pneumoniae cell free supernatant L. Vahe in vitro. Results Our results suggest decreases viability investigated lactobacilli, but does not significantly change probiotic’s against K. . Conclusions indicate combined might suggested for non-thermal sterilizing technologies.
