Effects of nitrogen fertilizer on protein synthesis, accumulation, and physicochemical properties in common buckwheat

ABSTRACT
Nitrogen (N) fertilization affects grain quality in common buckwheat (Fagopyrum esculentum Moench). But the effects of N fertilizer on various protein parameters are not fully understood. This study aimed to investigate synthesis, accumulation, and under four application rates Loess Plateau, China. Optimal (180 kg ha−1) improved yield, agronomic traits, transport increased yield component accumulation. Prolamin glutelin accumulation first then decreased with increasing application. The relationships between contents components amount applied generally followed quadratic functions. Nitrate reductase glutamine synthetase activities levels. waterholding capacity thermal stability reduced its emulsification capacity, but negligibly changed oil-absorption capacity. Hydrophobic amino acids content were main factors affecting quality.
