ABSTRACT
Litopenaeus vannamei are known to deteriorate in quality during low-temperature storage. This study demonstrated the potential protein indicators of partial freezing stored shrimp by traditional parameters and label-free based proteomic techniques. The carbonyl content myofibril fragmentation index (MFI) increased from 0.56 ± 0.03 2.14 nmol/mg 13.09 0.14 54.93 0.96, respectively. Within extension storage, trichloroacetic acid (TCA), cooking loss whiteness significantly increased. A total 240 proteins changed abundance at 10, 20, 30 days compared fresh samples. Projectin, ribosomal histone were biomarkers for denaturation oxidation muscle. Myosin heavy chain glyceraldehyde-3-phosphate dehydrogenase corresponded with degradation muscle proteins. light chain, tubulin alpha heat shock correlated tenderness water holding capacity; meantime, malate hemocyanin can serve as color indicators.
