This data article contains values of oxygen and carbon dioxide solubility diffusivity measured in various model real food products. These are stored a public repository structured by ontology. can be retrieved through the @Web tool, user-friendly interface to capitalise query data. The tool is accessible online at http://pfl.grignon.inra.fr/atWeb/.
