ABSTRACT
The present study aimed to design functional fermented goat milk with probiotic potential for metabolic diseases. Thereby, autochthonous lactobacilli from dairy products that target improving the inflammatory, lipid, and glycemic profile were characterized. We designed using Lactobacillus delbrueckii subsp. indicus CRL1447 as starter strain, supplemented different consortia formed by Limosilactobacillus fermentum CRL1446, Lactiplantibacillus paraplantarum CRL1449, CRL1472 strains. These selected their positive effects on inhibition of α-glucosidase, bile salts hydrolase activity, cholesterol assimilation, decreased triglyceride percentage in Caenorhabditis elegans. Furthermore, oral administration obese mice caused a significant decrease body weight gain ameliorated hyperglycemia hyperlipemia. results reveal this product food prevent obesity related pathologies. Goat milk-derived stand out marketing potential. Hence, incorporating novel probiotics represents group broad prospects promising nutritive therapeutic properties could be used prevention dyslipidemia people.
