ABSTRACT
The performance of probiotic bacterial strains is influenced by the carrier food and its functional components which while buffering through gastro-intestinal tract, contribute to an efficient implantation cells regulate features. Particularly, plant-based matrices are eligible substrate for hosting delivering microbial populations because their richness in nutrients, fibers, vitamins, minerals dietary bioactive phytochemicals. available data indicate that intrinsic health-promoting properties diverse can be successfully exploited improved developing effective association with probiotics, whose beneficial activity could turn modulated carrier. In this review, solid (particularly artichokes, table olives, apple cabbage) bacteria also described indicating role matrix sustaining during product processing, digestive process, gut implantation, finally exerting effects.
