ABSTRACT
Thermal treatment of purified pea protein in acidic environment was found to induce the hydrolysis and re-assembly form amyloid fibrils. Pea fibrils showed high polymorphism with coexistence mature worm-like can stabilize internal phase emulsions (HIPEs) volume fraction as 90%. The gel strength HIPEs enhanced increase fibril contents dispersion speed. typical microstructure highly packed polyhedral geometric oil droplets appeared both laser scanning confocal microscopy (CLSM) Cryo-scan electron (Cryo-SEM) images samples. High loading content lutein upto 0.2 wt% prepared realized stability against ultraviolet irradiation, heat iron promoted significantly.
