ABSTRACT
In this study, we assessed the phytochemicals of beetroot (Beta vulgaris) extract (BE), and examined antibacterial activity possible mechanism BE against Bacillus cereus. The in were analyzed by UPLC-ESI-MS-based widely targeted metabolomics analysis, identified a total 745 phytochemicals. Nine polyphenols 19 flavonoids with growth-inhibiting B. cereus identified. minimum inhibitory concentration (MIC) was 15 mg/mL. intracellular adenosine 5′-triphosphate (ATP) levels decreased exhibited features apoptosis-like death (ALD) [cell membrane depolarization, caspase-like protein activation, phosphatidylserine (PS) translocation, DNA fragmentation] depleting reactive oxygen species (ROS) after treatment. These results suggest is rich bioactive substances induces ALD Thus, diversity makes as source ingredients, especially promising potential natural preservative to reduce contamination.
