ABSTRACT
Cinnamaldehyde (CA) possesses high antibacterial activity, but it's unstable and volatile in food system. To overcome its drawbacks, a kind of dual-response controlled-release nanofiber was fabricated by electrospinning to embed [email protected] acid/carboxymethyl chitosan nanoparticles ([email protected]/CMCS-NPs) into silk fibroin nanofibers protected]/CMCS-NPs SF nanofibers). When the concentration 5 mg/mL, have better mechanical properties, tensile strength 3.21 MPa, elongation at break 47.51%. The β-glucuronidase (β-G) serine protease specifically secreted Escherichia coli (E. coli) O157:H7 could deconstruct shell HA via hydrolysis. It results CA from nanofibers. After days treatment with 4 °C 25 °C, amount E. beef reduced 99.98% 99.89%, respectively. Besides, no impact on sensory quality beef.
