ABSTRACT
To clarify the reciprocal influence between fortified bacterial powder of Lacticaseibacillus paracasei JY025 (LBP) with milk matrix during gastrointestinal digestion and storage period, characteristics stability (LFMP) were explored in this study by vitro simulated accelerated storage. The results showed that significantly improved survival (the highest improvement 27%) period 37%), which suggests can be an effective strategy to enhance viability probiotics period. Moreover, physicochemical properties changed due LBP decreased particle size digest promoted hydrolysis protein effect both maltodextrin (wall material) bacteria. also increased Maillard reaction is closely related condition.
