ABSTRACT
Mango peel is gaining recognition for its nutritional and functional value. This by-product shows variable composition depending on different factors such as variety, stage maturity, geographic site of production. work sought to evaluate mango composition, bioactive compound content, antioxidant activity, carotenoid phenolic profiles the three most commercial varieties equatorial region using UV–Vis spectroscopy, HPLC, UPLC. Significant differences (p < 0.05) were found between all regarding content compounds. Total phenolic, flavonoid, ranged from 2930 6624 mg GAE/100 g, 502–795 CE/100 3.7–5.7 mg/100 respectively. A high positive correlation (r = 0.961) ABTS radical-scavenging activity was samples. β-Carotene lutein identified quantified, samples cvs. Haden Kent showed highest β-carotene (8 g). Gallic acid rutin in samples, whereas mangiferin had amount (314 g) cv. Tommy Atkins. The results suggest that has compounds with significant properties, which can be used ingredients industrial products.
