ABSTRACT
Gamma irradiation is an effective way to eliminate the bacterial load in cocoa beans. During harvesting these are exposed various factors of contamination. The aim this study was analyze effect gamma on presence Salmonella spp considered a microbiological risk chocolate. Cocoa samples (n = 31) were treated with three doses (2, 3 and 5 kGy) besides control sample without irradiation. PCR method revealed 22 bacteria 124) Salm3-Salm4 amplified. DNA sequencing confirmed two isolates who belong spp. 20 belonging Klebsiella sp Enterobacter sp. These results retrieved from 2kGy, while radiation kGy no growth microorganisms.
