ABSTRACT
The increase in the consumption of poultry meat intensified production, which allowed emergence myopathies associated with broiler and turkey meat. aim to examine possible quality alterations 240 Pectoralis major muscle (breast fillets) from carcasses breeder hens. Regarding DPM, 120 samples breast fillets Nicholas strain minor together were selected according occurrence myopathy (tender), as follows: DPM score 2 (n = 40), 3 a control group unaffected by 0 40). Then, different samples, same flock birds, White Striping (WS) anomaly fillets), considering degree severity striations apparent muscle, moderate severe 40) (normal) without presence WS set up completely randomized design treatments for WS. We evaluated hens color, water-holding capacity (WHC), cooking loss (CL), shear force (SF), sarcomere length (SL) total, soluble insoluble collagen contents. color parameters lightness (L*), redness (a*), yellowness (b*) altered except CL, there difference WHC SF (P < 0.05). Significant differences observed 0.05) between Score too. Higher values total (%) most category involvement both myopathies. affect partial reduction texture this may have negative economic impact on industry, because these are main points consumer, value commercial cut.
