ABSTRACT
The aim of this study is to develop an environmentally friendly and effective method for the extraction nutritious date sugar using natural deep eutectic solvents (NADES) ultrasound-assisted (USAE). careful design a suitable NADES-USAE system was systematically supported by COSMO-RS screening, response surface (RSM) artificial neural network (ANN). Initially, 26 hydrogen bond donors (HBDs) were carefully screened affinity COSMO-RS. best performing HBDs then used synthesis 5 NADES choline chloride (ChCl) as HBA. Among synthesized NADES, mixture ChCl, citric acid (CA) water (1:1:1 with 20 wt% water) resulted in highest yield 78.30 ± 3.91 g/100 g, which superior conventional such (29.92 1.50 g). Further enhancements RSM ANN led even higher recovery 87.81 2.61 at conditions 30 °C, 45 min, solvent DFP ratio 40 mL/g. compared hot (CHWE) (61.36 3.06) showed 43.1% yield. developed process not only improves but also preserves heat-sensitive bioactive compounds dates, making it attractive alternative CHWE industrial utilization. Overall, shows promising approach nutritive sugars from dates advanced technology. It highlights potential valorizing underutilized fruits preserving their compounds.
