ABSTRACT
To further depict the interaction mechanism of wheat arabinoxylan (AX) and gluten proteins upon thermal processing, AX was enzymatically tailored with defined substitution patterns impact on heat-induced polymerization behavior comparatively studied. The results showed that tailormade promoted formation glutenin–glutenin glutenin–gliadin macrocrosslinks heating, optimal effect detected for depleted Araf disubstituted Xylp. AX, especially monosubstituted Xylp, facilitated ability α-gliadin into glutenin compared untailored AX. unfolding process partially impeded by while process. could bury Trp Tyr gliadin induced change disulfide bridge conformation to a less-stable state, alleviated enhanced strengthened network more heterogeneously distributed large protein aggregates.
