ABSTRACT
In our previous study, phloridzin, sucrose, l-alanine, and dulcitol presented synergistic effects in Camellia nanchuanica black tea (NCBT). This study aims to verify the of aforementioned sweet taste compounds mechanism involved. By conducting σ–τ plot analysis, phloridzin at recognition threshold concentration (phl) exhibited with different concentrations sucrose (Lsuc–6suc). Various their combinations were selected investigate impact on receptor cells. The results revealed that sucrose/phloridzin significantly increased calcium signal compared alone, attributed greater stability combination when binding Taste 1 Receptor Member 3 (TAS1R3; one subunit proteins). Ultimately, was transmitted brain, triggering activation more brain regions associated perception (right insular, postcentral, amygdala).
