Comparative Structural Characterization of Spiral Dextrin Inclusion Complexes with Vitamin E or Soy Isoflavone

ABSTRACT
In this study, the preparation and structural properties of spiral dextrin (SD)/vitamin E SD/soy isoflavone inclusion complexes were studied. SD was obtained from debranched normal maize starch using isoamylases. After fractionation a novel method gradient ethanol precipitation, separated into different fractions, among which SD-40 found to be optimal host molecule prepare with vitamin or soy isoflavone. X-ray diffraction (XRD) 13C cross-polarization magic angle spinning nuclear magnetic resonance (NMR) suggested that crystalline structures SD-40/vitamin SD-40/soy V6II V6III types, respectively. Small-angle scattering revealed complex formed tighter more compact crystallite than complex. Furthermore, connection investigated by two-dimensional Overhauser effect spectroscopy NMR, indicating part an alkyl chain encapsulated in helix cavity SD-40, whereas aromatic ring B complexed screw SD.
