ABSTRACT
Polydopamine (PDA) possesses high aqueous dispersibility, strong optical absorption, and a zwitterionic property, which give it multitudes of advantages to coat light-sensitive hydrophobic curcumin (Cur) for pH-responsive release. However, PDA is formed in alkaline conditions, hinders its potential application alkali-sensitive coating. Here, we developed method prepare PDA-coated Cur nanoparticles (NPs), reduced chemical degradation conditions. Encapsulation efficiency loading capacity decreased 73.69% 51.80%, as the time dopamine polymerization went on. could protect from light-induced powder solution forms. Controlled release delivery were observed under stomach intestinal conditions compared free Cur, resulted coverage thickness shell electrostatic attraction between Cur. NPs be promising way beverage food industry.
