ABSTRACT
Amphiphilic molecules self-assemble into supramolecular structures of various sizes and morphologies depending on their molecular packing external factors. Transformations between self-assembled are a matter great fundamental interest. Recently, we reported the discovery novel class single-chain galactopyranosylamide amphiphiles that to form vesicles in water. Here, describe how composed amphiphile N-oleoyl β-d-galactopyranosylamine (GOA) undergo morphological transition fibers consisting mainly flat sheet-like structures. Moreover, show this transformation is reversible temperature-dependent manner. We used several optical microscopy electron techniques, circular dichroism spectroscopy, small-angle X-ray scattering, differential scanning calorimetry, fully investigate characterize transformations GOA provide structural basis for such phenomena. These studies significant insight polymorphism sugar-based foresee future applications rational design materials.
