ABSTRACT
The well-established health beneficial value of pomegranate juice is leading to increased demand for products and the expansion orchards worldwide. current study describes differences in chemical composition major ingredients arils peels 11 accessions grown Mediterranean desert climates Israel. In most accessions, levels antioxidant activity content total phenolics, anthocyanins, soluble solids, glucose, fructose, acidity were higher aril fruit climate compared those climate. However, exhibited activity, including two hydrolyzable tannins, punicalagin punicalin, results indicate that environmental conditions significantly affect quality compounds.
