ABSTRACT
In this paper volatile organic compounds (VOCs) from Tuber magnatum fruiting bodies were analyzed using a PTR-TOF-MS instrument. The aim was to characterize the VOC's profile of and identify if any VOCs specific season geographical areas. Multiple factorial analysis (MFA) carried out on signals obtained by MS. Experiments ITS region sequencing proved that T. life cycle includes formation at two different times year. profiles diverge when seasonal productions are considered. Using PTR-TOF-MS, present levels as low pptv detected. This made it possible determine both origin (Alba San Miniato) biological phases in Miniato truffles.
