ABSTRACT
Pickles are popular in China and exhibits health-promoting effects. However, nitrite produced during fermentation adversely affects health due to formation of methemoglobin conversion carcinogenic nitrosamine. Fruiting bodies the mushroom Boletus edulis were capable inhibiting production pickle fermentation. A 90-kDa reductase (NiR), demonstrating peptide sequence homology fungal reductase, was isolated from B. fruiting bodies. The optimum temperature pH enzyme 45 °C 6.8, respectively. NiR prolonging lifespan nitrite-intoxicated mice, indicating that it had action an antidote. could also eliminate blood after intragastric administration sodium nitrite, packaging into capsule, this nitrite-eliminating activity persist for at least 120 minutes thus avoiding immediate gastric degradation. represents first purified mushrooms may facilitate subsequent applications.
