Bifidobacterium animalissubsp.lactisAD011 catalyzed >85% of quercetin-3-glucoside and isorhamnetin-3-glucoside into quercetin (Q) and isorhamnetin (IR), respectively, in 2 h. These Q and IR showed improved anti-inflammatory activity.
