Preparation and characterization of soybean insoluble dietary fiber and its prebiotic effect on dyslipidemia and hepatic steatosis in high fat-fed C57BL/6J mice

ABSTRACT
The potential benefits of insoluble dietary fiber (IDF) in the regulation lipid metabolism have been reported large prospective cohort studies although molecular regulatory mechanism is still unclear. Okara a by-product obtained during soybean processing for soy milk and curd (tofu), which rarely utilized can be cheap (DF) resource. In this study, structure physicochemical properties (SIDF) extracted from okara were characterized, prebiotic effects on fat investigated vivo. results showed that main monosaccharides SIDF (90.50%) identified galactose, arabinose, xylose, rhamnose glucose. Scanning electron microscopy (SEM), Fourier transform infrared spectroscopy (FT-IR), X-ray diffraction (XRD) analyses suggested had loose porous structure, polysaccharide functional groups, typical crystalline cellulose I structure. addition, ideal oil-adsorption capacity (OAC; 7.95 g g-1) significantly improved cholesterol adsorption (11.14 mg at pH 7.0. vivo, IDF supplementation reduced serum levels inhibited hepatic accumulation. Additionally, administration steatosis by stimulating lipolysis via upregulation PPARα, CYP4a10 CPT1a. This first systematic study composition, properties, function biological SIDF. above show could used as an ingredient food well play positive role improving added value promoting its comprehensive utilization.
