ABSTRACT
The eastern part of Hainan, China, has a flat terrain and suitable climate with abundant sunshine rain. This unique environment makes the tropical microbial resources natural fermented food rich. Therefore, we combined Shotgun metagenomic sequencing, 16S rRNA sequencing pure culture technology to analyze diversity, microbiota composition, species differences correlation 30 traditional samples collected from Wenchang, Qionghai, Wanning Lingshui in Hainan province, isolated, identified preserved microorganisms them. results showed that community structure differs significantly between different regions substrates. alpha diversity foods area was higher than those other three areas. beta indicated structural difference Qionghai smaller. is consistent fact precipitation highest similar Qionghai. vegetables, followed by grains, lowest seafood. Beta composition grains vegetables very similar, but seafood different. analysis firmicutes proteobacteria are dominant bacterial phyla, Lactobacillus plantarum fermentum Hainan. Lactic acid bacteria region regardless substrate used fermentation. According functional characteristics, metabolism biosynthesis pathways tend be active. In addition, technology, 342 lactic strains province. study helped us understand characteristics communities southern China supplement resource pool China. Moreover, it provided new insights directions for development utilization foods.
