ABSTRACT
This review focuses on the potential use, nutritional value and beneficial health effects of oilseeds as a source food protein. The process extracting oil from produces by-product that is rich in proteins other valuable bioactive components. product primarily used for animal feed. However, demand continues to rise, plant-based have real success applications. Among different plant protein sources, could be an alternative human diet. data we so far show present content up 40% relatively well-balanced profile amino acids with sulphur-containing acids. Nevertheless, they tend deficient lysine anti-nutritional factors (ANFs), which therefore means lower anabolic than proteins. To enhance their value, oilseed can combined sources subjected processes such dehulling, heating, soaking, germination or fermentation reduce ANFs improve digestibility. Furthermore, due peptides, also bring benefits, particularly prevention treatment diabetes, obesity cardiovascular diseases. additional are needed before endorsed humans.
