ABSTRACT
Fructooligosaccharides (FOS) and raffinose family oligosaccharides (RFOs) are two highly abundant water-soluble carbohydrates in plants. The typical procedures for the FOS RFO structural determination using mass spectrometry involve permethylation, followed by hydrolysis of permethylated into monosaccharides, then identification linkage positions GC spectrometry. However, position sequence is not straightforward, thus this method limited to small or with simple linkages. In study, we employed a new method, logically derived tandem spectrometry, determine structures RFOs. We first showed that monosaccharide disaccharide CID spectra aldohexose ketohexose can be rationalized dissociation mechanisms. Then demonstrated RFOs identified, linkages determined, differentiated, suggesting useful
