ABSTRACT
Enzymatic hydrolysis of oleuropein carried out in a NMR tube, gave two diastereoisomeric aglycones, which have been identified and characterized by proton carbon experiments the same aqueous reaction medium. The stereostructures, assigned to aglycones NOESY spectroscopy molecular dynamics calculation are those diastereoisomers, 4a 4b.
