ABSTRACT
Summary A new gelatin‐protocatechuic acid (PCA) film with Escherichia coli O157:H7 phage JN01 was developed and characterised. After incorporated JN01, swelling value, water vapour permeability, solubility elongation at break of gelatin‐PCA were not significantly different. The addition increased b value transparency film, while it decreased L a tensile strength film. Moreover, the gelatin‐PCA‐JN01 presented antioxidant activity 60.07%. Furthermore, could be steadily released from gelatin‐JN01 films in aqueous solution, their release rates 7.56% 0.12% after 11 h, respectively. microstructure analysis showed that particles clustered uniformly distributed aggregation would attenuated presence PCA. Meanwhile, E . counts 1.13 log 10 CFU mL −1 0.45 lower compared pure gelatin vitro 4 °C for 24 stored 7 days, 1.00 g 0.80 beef packed these two films, without In conclusion, has potential application food preservation.
