ABSTRACT
Summary A new gelatin‐protocatechuic acid (PCA) film with Escherichia coli O157:H7 phage JN01 was developed and characterised. After incorporated JN01, swelling value, water vapour permeability, solubility elongation at break of gelatin‐PCA were not significantly different. The addition increased b value transparency film, while it decreased L a tensile strength film. Moreover, the gelatin‐PCA‐JN01 presented antioxidant activity 60.07%. Furthermore, could be steadily released from gelatin‐JN01 films in aqueous solution, their release rates 7.56% 0.12% after 11 h, respectively. microstructure analysis showed that particles clustered uniformly distributed aggregation would attenuated presence PCA.
