ABSTRACT
ABSTRACT: The amounts of vitamin A palmitate lost and isomers formed in corn flakes fortified with a were determined during storage at ambient (avg. 23 °C) elevated (45 temperatures. Two isomers, 9‐cis 13‐cis, found. initial consisted 5% 13‐cis less than 1% the remaining being all‐trans. In either complete mixture or only, distribution these compounds was nearly constant throughout irrespective sample type conditions. rate reaction kinetics on degradation also obtained. After 6–8 wk storage, more 90% all samples except kept temperature. This study showed that loss substantial even presence other vitamins including A, B 1 , 6 12 C, D reduced Abut still significant.
