ABSTRACT
The effect of ε-polylysine hydrochloride (ε-PL) and thymol (TY) in the changes biogenic amines (BAs) quality properties Illex argentinus was evaluated by measuring content BAs, total viable count (TVC), pH, sensory score, odor change. experiment divided into four groups, control, ε-PL, TY, compound (ε-PL–TY) group. results showed BAs-producing bacteria contained Enterobacteriaceae bacterium, Citrobacter braakii, Klebsiella pneumoniae, Obesumbacterium proteus, Hafnia alvei, paralvei, alvei sensu. ε-PL–TY effectively inhibited increase BAs content, TBA, maintained fresh flavor properties. best to reduce phenethylamine, putrescine, cadaverine, tyramine 45.11%, 79.08%, 72.92%, 63.53% compared with control at end storage. a promising inhibitor that could protect edible value safety aquatic products. Practical applications is susceptible corruption, then microorganism will produce several amines, while combined preservative most convenient way its after postmortem. Although has better antibacterial activity as preservative, single cannot exert effect. Thymol natural plant ingredient great antioxidant activities, which had an inhibitory synergy ε-PL this study. hydrochloride– be biochemistry activities squid.
