ABSTRACT
The benefi ts of probiotic bacteria have been widely explored.However, fermented foods and digestive system humans animals are an inexhaustible source new potentially microorganisms.In this study we present three Lactobacillus plantarum strains isolated from diff erent dairy products: cow′s cheese, sheep′s cheese whey.In order to determine the antibacterial activity yet unexplored L. against Salmonella enterica serotype Typhimurium, in vitro competition co-culture tests were done.Furthermore, adhesion these Caco-2 cells their infl uence on tested.Results showed potential strains.L. survived presence 1 % bile salts, they possessed acidifi cation ability, signifi cantly att enuated growth S. Typhimurium brain heart infusion broth.All tested able adhere impair Typhimurium.All exhibited cant anti-Salmonella activity; therefore, further testing vivo models should follow.
