ABSTRACT
Essential oils are compounds that formed by several lipidic aromatic substances found in different parts of a plant. There many plants with essential and extraction methods used to take advantage the diverse properties they offer. In recent times, resistance microorganisms antibiotics opens interest search for new routes antimicrobial control natural origin, within them, have enormous potential. They wide variety chemical act establishing synergism relationships perform antimicrobial, antioxidant, antifungal, antiviral, other activities characterize them. Citrus an economical, ecological, alternative preservatives. The citrus from waste peels not only protects environment, but can also be various applications, including food preservation. Current needs reduce allergenic effects caused certain foods demand urgent research this area; studies applications citrusderived show clear technological ecological solve problem.
