Development of High Antioxidant / High Fiber Functional Peach Nectar Containing Lutein/Lycopene and Various Dietary Fibers Using D-Optimal Mixture Design Optimization

ABSTRACT
For developing a type of healthy and functional drink with high fiber antioxidant properties, three types dietary (bamboo fiber, citrus polydextrose) two carotenoids (lycopene lutein) were used in the peach nectar-based formulations. Based on D-optimal mixture design, ratio fibers constant amount (6 g) carotenoid mg) selected as independent variables. 24 formulations presented by Design Expert software based anti-oxidant physical stability tests, highest desirability was achieved formulation 100% polydextrose lycopene (F8 sample) 0.997. This showed 88% 85% DPPH activity. In addition to F8 sample, five other samples for further experiments. second stage, different tests including total phenol, flavonoid, vitamin C, minerals trace elements, properties (with methods), lutein, degradation kinetics rheology, sensory evaluation done fortified nectars. Experiments that highly effective all measured parameters had greater effect than lutein.
