ABSTRACT
Foods enriched with zinc can reduce the rates of many diseases and health expenses. Oat, as a nutraceutical food, represents potential nutritional source by increasing levels in grains biofortification. The objective study is enrichment oat caryopses, analysis productivity indicators, industrial chemical quality for technology validation. experiment was carried out 2017, 2018 2019, Augusto Pestana, RS, Brazil. experimental design randomized blocks eight replications five doses (0, 500, 1000, 2000 4000 g ha-1) applied via foliar grain filling phase. There are almost no changes panicle components due to effect biofortification compound zinc, change yield regardless agricultural year. Indicators organic composition not effectively affected biofortification, ensuring use without compromising these variables. Considering caryopsis edible product oats, from ha-1 sulfate, guarantee. Biofortification promotes significant increase caryopsis, however, reducing iron content structures
