ABSTRACT
Tomatoes are considered as functional food due its considerable content of anti-oxidant and dietary fibers.Accordingly, the present study was conducted to effect storing tomatoes their products (juice, ketchup tomato paste ) in refrigerator for a week two weeks freezer month, months three on bioactive compounds.Results show marked increase lycopene when detected (11.06mg/100g) while by 221.51%.According antioxidants fresh showing it (39.45% Inhibition), On other hand, storage best(8.24%).While one month best (9.56%).The highest vitamin C after (38.49mg/100g).Effect Vitamin percent increased 22.21% storage.Thus, isadvised contains good amount antioxidants, Lycopene C.
