ABSTRACT
Background: Due to their nutritional benefits and economic importance, dates are essential for all ages, nations, civilizations. Dates include some components that can boost nutritious worth. Objective(s): We aimed assess the quality safety attributes of Siwi semi-dry products with diverse tastes fillings by measuring chemical composition, features, sensory aspects. Methods: Eleven date were evaluated. The flavors milk, coconut, Oreo, cinnamon, coffee, Nescafé, cappuccino, caramel, peanut butter, Lotus, Nutella. Additionally, our study assessed including vitamin mineral content besides evaluating quality, safety, characteristics. Statistical analysis was performed, a 5% least significant difference calculated each treatment. Results: This investigated snacks, revealing distinct profiles. Dark mix whole had highest calorie, protein, fat content; while plain lowest. Plain rich in carbohydrates sugars. generally showed elevated levels. Quality like texture favoured dates. Microbiological confirmed no aflatoxins detected. Sensory evaluation ranked milk as colour, taste, odour, texture, overall acceptance. These insights provide comprehensive overview, valuable information both consumers producers snacks. Conclusion: Our food source carbohydrates, fibres, minerals, vitamins.
