ABSTRACT
ObjectivesFor years the Livestock Corporation of Costa Rica (Corporacion Ganadera, CORFOGA) has been gathering extensive cut-out data with an aim to establish a primary segregation carcasses by sex class and then yield grades. Despite efforts CORFOGA associated academic groups, no reports were found on prediction equations for estimating cutability Rican beef carcasses. Hence, from 292 carcasses, representing cattle produced in different regions under similar conditions (fed pasture/forage-based diets) Bos indicus-influenced breed types 2 classes (156 bulls, 136 heifers or cows) used develop estimate fabrication products (bone-in boneless cuts) co-products (bone fat trimmings).Materials MethodsThe independent variables (predictors) considered regression analysis were: carcass weight (CWEIGHT), kidney (KIDNEY), length (CLENGTH) leg perimeter (LEGPER), back thickness (BACKFAT), external amount distribution score (FINISH), loin eye area (LEA), Achilles tendon (LTENDON). Models developed predict total closely-trimmed, valuable cuts (TVC) kg [TVCKG] percentages [TVC%]); bone-in (TC) [TCKG] [TC%]), bone percentage (PBONE), trim (PFAT). Statistical analyses included descriptive tests, correlations, residual multiple linear regression.ResultsUnexpectedly, fatness indicators (FINISH AND BACKFAT) not significantly TVC TC yields, probably due usual hot trimming applied during dressing at harvesting plant. Sex had low (ca. 2%) moderate 66%) influence (in %), PBONE PFAT. Most variation (50% more) TVC, TC, BONE, FAT could be explained its simple over any 13 traits as potential predictors. None predicting BONE showed R2 coefficients high numerical values. The which highest proportion variability TVC%: 44.375 – 1.067 (KIDNEY) - 0.052 + 0.069 (LEGPER; 0.259; Mallow´s-Cp: 3.19; CME 17.36).
