ABSTRACT
The paper discusses the role of institutional communication in case health risks and emergencies. article is divided three sections. first section examines most recent theories on risk its communicational aspect; second analyses a state emergency crisis, specifically panic which stemmed from perceived danger an avian flu pandemic Italy; finally example best practice form food safety handbook designed edited by Italian Ministry Rural Affairs, was based skills knowledge acquired during emergency.
