ABSTRACT
This work aims to propose a sensorial analysis method which allows quantitative evaluation of taste stimuli within a cognitive context using electroencephalogram monitoring. The experiment was conducted in two steps: (a) Determination flavor perception threshold and (b) investigation the below conscious threshold using (EEG). volunteer’s digital signal processing performed time-frequency analysis by AGR method. evaluates behavior time-frequency framework by means representative coefficients. It could be verified that 3rd coefficient noiseless and then EEG information better characterized. Thus it possible verify provided linear separation sucrose concentration, therefore, able represent time-frequency framework separating concentrations independent subject response. These results suggest the methodology described this article can used as tool complement sensory analysis.
