ABSTRACT
Abstract Surveillance data published since 2010, although limited, showed that there is no evidence of zoonotic parasite infection in market quality Atlantic salmon, marine rainbow trout, gilthead seabream, turbot, meagre, halibut, common carp and European catfish. No studies were found for greater amberjack, brown African catfish, eel pikeperch. Anisakis pegreffii, A. simplex (s. s.) Cryptocotyle lingua seabass, bluefin tuna and/or cod, Pseudamphistomum truncatum Paracoenogonimus ovatus tench, produced open offshore cages or flow-through ponds tanks. It almost certain fish closed recirculating aquaculture systems (RAS) facilities with filtered water intake exclusively fed heat-treated feed are free parasites. Since the last EFSA opinion, UV-press artificial digestion methods have been developed into ISO standards to detect parasites fish, while new UV-scanning, optical, molecular OMICs technologies methodologies detection, visualisation, isolation identification fish. Freezing heating continue be most efficient kill fishery products. High-pressure processing may suitable some specific Pulsed electric field a promising technology further development needed. Ultrasound treatments not effective. Traditional dry salting anchovies successfully inactivated Anisakis. Studies on other traditional processes – air-drying double (brine plus salting) suggest anisakids inactivated, but more covering these species products required determine if always Marinade combinations effectively anisakids. Natural products, essential oils plant extracts, safety organoleptic lacking. Advanced techniques intelligent gutting trimming being remove from
