Electron spin resonance analysis of different mushroom parts and their hydroxyl radical scavenging activities assessed by spin trapping method

ABSTRACT
In this study, we analyzed the different parts of mushrooms using electron spin resonance (ESR) to identify radical species, and examined their hydroxyl scavenging activities. The four kinds investigated in Agrocybe cylindracea (Shakkiko1 Shakkiko2), Grifola gargal, Coprinus comatus were separated into caps, stipes, bases stipes. ESR spectra all specimens consisted signals originating from organic free radicals, Fe3+, Mn2+, Cu2+ species. cap showed highest Fe content. mushroom body revealed activity values, among which C. stipes highest. activities evaluated did not correlate with contents; however, a positive correlation Cu contents was observed.
