ABSTRACT
The genus Passiflora spp. stands out as an important source of bioactive compounds and health promoters; however, not all its species have been studied in depth, the case pinntistipula, or "puro puro". In this sense, main objective research is to study antioxidant capacity, physicochemical properties rheological behavior puro" juice from Pamuri Community, Tayacaja Province, Huancavelica. characterization was carried according official methods international analysis (AOAC). parameters evaluated were percentage humidity (66%), ashes (3%), fat (1.5%), proteins (4.5%), carbohydrates (25%), total energy (100%), pH (4.5), acidity (1.3%), soluble solids (18.5%). color determined on CieLab scale L* (34.5), a* (1.2), b (4.4), C* (4.5) h* (74.3). capacity with 2,2′-azino-bis (3-ethylbenziozoline-6)-sulfonic acid (ABTS) method, value obtained 5.2 µmol-Equi. Trolox/g. pure cigar using a rotary viscometer at temperatures 15, 20, 25, 30 °C; concentrations 18.5, 30, 35 °Brix. power law model fitted experimental results showed non-Newtonian flow behavior. index (n) less than unity concentrations, indicating pseudoplastic nature juice. Arrhenius able relate apparent viscosity temperature. consistency (k) varied range between 0.42 1.38 Pa sn, 0.26 0.55.
