ABSTRACT
Aflatoxin B1 (AFB1) and Ochratoxin A (OTA) are considered the most important mycotoxins in terms of food safety. The aim this study was to evaluate hepatotoxicity AFB1 OTA exposure Wistar rats assess beneficial effect fermented whey (FW) pumpkin (P) as functional ingredients through a proteomic approach. Overall, results highlighted strong downregulation DEPs presence but not both, suggesting synergistic effect. However, P have helped mitigation triggered mycotoxins.
