ABSTRACT
The objective was characterize the tilápia do Nilo (Oreochromis niloticus) fishermen and their product in Salinas/MG municipal market.The characterization made through an interview visiting location of fishery processing tilápia.After survey fish samples were collected directly from market Salinas-MG.These immediately transported isothermal box to laboratory where microbiology analysis made.All data discussed based on federal legislation Agricultural Ministry National Agency Sanitary Vigilance.The results show that is a traditional way using ceiling Salinas dam.Furthermore have low study level, with 50% only elementary school are helped by wifes.In several steps problems hygienic techniques, like nonspecific place 80% fishermen.Confirming this observation, bacterial counting elevated Staphylococcus aureus coliform proposed analysis.It clear process must be more carefully all aspects during fishing, commercialization tilapia.This situation exacerbated lack training guidance trained institutions or state power related fishermen.
