Comprehensive study of non-volatile and volatile metabolites in five water lily species and varieties (<i>Nymphaea</i> <i>spp</i>.) using widely targeted metabolomics

ABSTRACT
Water lilies, members of the Nymphaeaceae family, are globally cultivated aquatic plants known for their diverse colors and significant ornamental, economic, beverage, medicinal, ecological value. In this study, we employed ultra-high performance liquid chromatography-tandem mass spectrometry (UPLC-MS/MS) to analyze non-volatile components simultaneous distillation extraction (SDE) in combination with two-dimensional gas chromatography-time-of-flight (GC×GC-TOFMS) volatile five water lily species varieties. Results showed that 118 differential metabolites including flavonoids, phenolic acids, amino lipids were screened among 533 non-volatiles. Cyanidin-type anthocyanins, cyanidin-3-<italic>O</italic>-galactoside, cyanidin-3-<italic>O</italic>-glucoside, cyanidin-3-rutinoside, present high amounts purple-colored <italic>Nymphaea</italic> 'Detective Erika'. Conversely, delphinidin is found quantities 'Blue Bird', which exhibits a blue color. KEGG analysis flavonoid biosynthesis anthocyanin exhibited enrichment. Additionally, total 166 volatiles mainly aromatic compounds, alkynes, ketones, alcohols esters. Among them, concentrations key compounds 1,11-dodecadiene, benzyl alcohol, benzaldehyde, <italic>α</italic>-farnesene dimethyl sulfide, varied significantly different samples. This study reveals variations chemical These findings contribute enhancing our comprehension metabolic variability composition might shed light on unlocking new possibilities potential application beverage industry.
