ABSTRACT
Therapeutic plants and their constituents are increasingly recognized for potential health advantages attracting significant global attention in the context of addressing chronic ailments such as diabetes, cardiovascular disease, cancer. Diabetes is a prevalent condition that has consistent increase its overall prevalence. Quinoa, classified pseudo-cereal, possesses features render it very suitable dietary option those with owing to notable functional advantages. The present study aimed analyze anti-diabetic quinoa examine physico-chemical characteristics. For this purpose nutritional composition seeds was examined. samples exhibit moisture content 11.78%, an ash 2.50%, crude fat 4.06%, protein 12.91%, fiber 5.14%, NFE (nitrogen-free extract) value 63.51%. Furthermore, noteworthy these substances comprised amounts Magnesium, Calcium, Iron, Zinc, concentrations 326, 650, 14.5, 45 mg/Kg, respectively. antioxidant profile exhibited values 108.17 mg GAE/ml total phenolic (TPC), 134.52 ug CE/mL flavonoid (TFC), 21.21 TE/g 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity.
