ABSTRACT
Cooking programs are one avenue to promote healthy eating. However, many cooking a size-fits-all approach and do not consider costs, time, accessibility, or cultural barriers the recipes being taught. Healthy Bites is program developed by medical students, physician assistant chefs remedy this redesigning be less than $3 per meal, fewer 30 minutes cook, inclusive of accessible ingredients, tailored for Latin American dishes. In descriptive work, we implemented (HB) recruiting Latino participants from free clinics community centers in Sacramento County measure their changes confidence various aspects food preparation. We also assessed utility collaborative, community-based student initiative increase skills students. Although limited number participants, report an cost effective foods, accessing dishes that culturally identify with, timely manner. Our findings suggest courses can positively influence behavior training healthcare professionals.
