Currently, modernization has had a negative effect on Mexican culinary traditions and this an impact the environment. The Milpa diet is traditional food pattern that uses beans, corn, chili pumpkin as base, also integrates consumption of other local foods such wide variety vegetables. One these vegetables quelites, it type edible leaves, which provide important source vitamins minerals. Rescuing utmost importance for sustainable healthy diet. Therefore, objective study nutritional value recipe based “Milpa Diet”: Quelites pancakes. To inform about relevance health benefits consuming recipes.
